Bosses at Albert's Shed, Dukes 92, Albert's Didsbury and Albert's Worsley say some 'larger parties' have a 10 per cent service charge added to the bill and a part of that is kept by owners Elle R Leisure. Company bosses say this 'proportion' of the service charge is used to pay for 'staff welfare items', such as nights out, food and drinks and discounts and training for employees." One waiter, who wished to remain anonymous, has slammed the chain claiming that the policy is effectively 'stealing' from staff. He says service charges from big tables are only shared with staff during December when service charges are divided between staff. The waiter said staff are told to tell customers that the service charge is used for staff training and staff incentives. He added: "As a waiter/waitress we work so much harder on these larger tables then we don't receive the tips of the customer who believes they leave it for us." Elle R Leisure operations director Lucy Ramsbottom said: "Elle R Leisure know that staff receiving good tips is essential in retaining the best servers. "A full time server at Albert's Restaurant earns circa pa (40% of which comes from tips) "Some larger parties have a 10% service charge added.
